So I am upgrading to an x570 mb.

Anyone here running some PCIe Gen 4.0 M.2 drives? Trying to decide whether to go One 4tb or Two 2tb?

I will have One 1tb Sabrent for OS and programs. (Read up to 5000 MBps / Write up to 4400 MBps)

The other one or two will have games and projects

The motherboard has 3 M.2 slots and an additional 2 more I believe if I want. It is the MSI x570 ACE

Put the fastest M.2 in the slot closest to the CPU (the one you intend to use for the system drive). This should be the fastest slot. Then put any others in the remaining M.2 slots.

If I am using a PCI 3.0 mobo and M.2 drives, is this a waste? Currently running two Samsung 970 EVO Plus 1TB drives on my MSI Z490 Unify with an i7 10700k.

Depends on your cash flow. I'd love a 4tb nvme but super pricey
