Help with memory

I have an EVGA x99 classified motherboard with 32gb of ddr4 2400 memory.

Why is the memory running at 2133 instead of 2400? Also I want to upgrade it to at least 3000. Should I buy 3000 sticks or get them higher in case the motherboard scales them down? I have the latest bio 2.07 on one bios and 2.06 on another.

    Most likely because you don't have xmp enabled.

    2133 MHz is the default frequency on that chipset.  Enabling XMP will set the speed to what the chip manufacturer has determined.
     
    I wouldn't pay extra for higher MHz RAM, only to manually set it slower.  Just get the speed you want and save some money.  You may however run into a limitation with how fast of memory the CPU can support.  The CPU integrated memory controller varies in capability once you start moving into higher speeds.  Some CPU's may have trouble running 3,000MHz a the X99 quad-channel board.  At that point you may be forced to lower your settings.

    This can be as simple as not having the XMP enabled in. BIO's you are on the latest BIO's for this motherboard, what slots are you using for this kit, is this 4 sticks or 8?

    i am on bios 2.07.  I have 4 sticks totaling 32gb of ddr4 2400.  I have an i7-5820x which has a default of 2133 and 28 lanes is what i was reading.  I also have a 1080ti.  Would i get better performance by bumping up the memory to 3000 or 3200 or getting an i7-6850k which has 40 lanes and a default of 2400?

    3200 is preferred Over 3000 --> because of the CPU BCLK  (CPU Strap)
     
    3000 will try to force BCLK of 125 ---> your CPU wants 100
