Anyone tried powering any of the 1600watt units with 240v?  Hot/Hot/ground?
 
I've read so many different things on the internet... I'm a little leery of trying it. 
 
As far as I can see it shouldn't be a problem.  Unless the units need a neutral for some reason.

Which model are you talking about specifically?  Although nearly all of our power supplies are switching, the ones marked specifically for 240V should only be used on a 240V outlet.

It depends on the power supply. You didn't provide a part number, therefore your question cannot be answered.
Some can. Some can't.
If it says 115 to 240 volts in the specs, yeah, go for it. If it only says 115 volts in the specs, no, don't.

This is a better answer than mine.  The other corollary is that if it says 220V-240V (or similar), don't try it on a 115V circuit.

Luckily most manufacturers make PSUs that switch between 115 VAC to 220 VAC or 115 VAC to 240 VAC. Here's an example:
AC input in the picture below says 115 VAC to 240 VAC.

It's a 1600G+, what I was worried about is if it needs the center tapped neutral for some reason.  And yes I would never think about it if it was rated for 110-115 only.

Electrician here, the only instance of this is combination is in combination appliances like your stove or dryer. They use the 120v for controls and 240 for the heating elements, where as a PSU would literally just invert 240 volts to 12V for efficiency. Wire up a regular receptacle with 2 hots and a ground and you're good my friend!

Finally dropped a 50amp sub panel and wired the rig's PSUs for 240v.  No issues so far.  I also installed a power meter on each leg inside the panel.
