    so what's the advantage of going with a gold over bronze psu?

    As Austin86 says, you will end up saving huge $$ in the long run.  Here's an old techpower forum post from over a decade ago before Titanium was a thing.  This shows you the savings from moving from a white to bronze, silver, gold and plat.  Bear in mind that the cost of 1kwh at the time was $0.12 and they are only using a time period of 10 hours per day.  So it would need to be adjusted to your current rates.  There used to be a visual calculator that did all this to show you the savings through a year, but the site is either dead or moved (it was posted in the folding/crypto forums a few years ago).  Oh wait it was crawled by the https://web.archive.org/web/20201212104611 http://www.orionpsudb.com/efficiency-calculator  waybackmachine (won't let me hotlink it so copy and paste these and remove the space I've edited this 3 freaking times trying to resolve it haha). <-- enter in your current PSU, power costs, and roughly what you would be using for load from the three choices and it will tell you what you will save in a year. 
     
    Basically buying a Gold to replace your Bronze will pay for the difference in the first year.

    Never ever skimp on the psu it all starts from there. Hitting your maximum effiency Target "on the PSU" range on your max power draw. "amps on the rail."
