I would not use a splitter.  To maintain the appropriate power and voltage, each 8 pin connection on the GPU should go to one PCIE connection at the PSU.  Splitters can ruin your GPU and could cause a short, which could catch your system on fire.  If you do not have enough PCIE connections on your PSU, you should use a higher wattage unit.

Get a PSU that has all the connectors you need..Many PSUs come with "Y-Cables" that are rated for the job and are fine, otherwise they wouldn't come with them..Use the Outervision Power Supply Calculator to get a good estimate of your system wattage need and see some recommended-wattage PSUs.

My PSU comes with those "Y" PCIe cables, but what if I want more of those original ones that I know that are rated for the job? Where can I buy more?

You should upgrade your power supply. What comes with the power supply is all that they recommend using. If you add up the rating of all the cables and plugs you are using, if you add more splitters, you will see that it all adds up to more than the power supply is rated for. There is a direct relationship between what the power supply is rated for and how many connections the power supply supports. There's no point in adding more connections for a power supply that can't handle the extra load.

When you say splitters, are you talking about those sata to pci e 6/8 pin connectors? Those things are sketch. But remember those can only offer like 50w power I think. So they’re not gonna deliver the 100w or more power that a true 6/8 pin can deliver. I would say that would be okay if you were powering a GTX 1650 that just happens to come with a 6 pin but anything else I wouldn’t use one of those

I started with a Dell Optiplex 7010, upgraded to several different models into a Precision T1700 case swap. Now I have a decent setup that I am happy with:
    Ryzen 5 3600
ASUS B550 TUFF Gaming plus wifi
    32GB DDR4 3200 Crucial Ballistix white
EVGA GTX 1060 6gb (horrible spiral cooler)
    EVGA 750 G6 power supply
    Phanteks P360A white case
Oh here's an associate code too if you want 6L3ADV80V7N7JMB
