Mario 64.  I never finished Galaxy.  Didn't play sunshine.
 
Mario 2 would probably be my second favorite.  Didn't like 3 as much.  Probably would have if progress could be saved.  Otherwise Mario 3 could only be beat in a reasonable amount of time with the right warps.  I don't think I ever played it all the way through without warpint.

Of the newer games I did enjoy odyssey for the ending ( and hoping around as a giant piece of meat) but super mario is my personal fav

Super Mario 64 : Although The remake is what introduced me into this one. Sure the controls in the remake are tankish, but the new content is what I like about it.
Super Mario Odyssey : Probably the best 3D Mario game that got plenty of people to get the switch including myself just because of this game. And man oh man is it good. Also considering this was the return of the traditional 3D Mario games where it involved around exploring and collecting stuff like 64, sunshine, and galaxy games.
 
As for the 2D ones, I would pick Super Mario World because of the amount of levels and power ups it featured.
