This occurs after making literally any change on any profile and hitting save regardless of whether I've hit apply first.
This also causes any changes I've made to not be saved.

Hello and Welcome to the  Forum!
Other member have report the same problem as your after hit apply become crash so they use early version EVGA Precision X1 Version 1.0.2 which are stable!
I have notice you are use GTX1080 which you can use MSI Afterburner it will solves your problem!

As a developer I truly can't understand not testing the latest version of your software as a clean install and therefore not fixing this NPE immediately. But then again I guess they have a solid forum so this has been fine overall.
