Strictly for 4K gaming, could care less about more cores so I went with a 9900KS. Now all that's left is to get memory.
 
After reading the Z390 Dark FAQ on xDevs, it says: Optimum memory speed for high-end Z390 system is around 3800-4200 MHz with good memory timings.
 
But I've always understood 3200Mhz is the sweet spot for gamers. Anything faster is just throwing your money away.
 
So for gaming, should I get minimum 3800Mhz mem for my Z390 Dark (like Tin recommends) and dabble with overclocking it to get a few more fps, or just get two sticks of 3200Mhz (14-14-14-34) and be done with it?

I'd look for reviews that include results for the Game you play ... the real question should be how FPS are impacted
 
Otherwise buy the fastest in your target budget
 
Some like to benchmark for the best possible score ... & speed matters for them

2666MHz. Why? Cause that is the max recommended by Intel, and anything higher than 2666MHz isn't guaranteed, and running your ram higher than 2666MHz could cause random booting issues.

What you said are the official recommendations from Intel as regards their products guarantee, but the Z390 Dark is meant for overclocking as well as the entire 8th & 9th gen "K" cpus and both support high speed memory... @sjcrespo all depends on your budget but as regards your hardware that you've recently purchased, buying slow memory below 3200 would be a crime especially since their prices have gone down... The best vendors are: TeamGroup, Gskill, Kingston, Adata and Crucial

Yes, definitely. 3200CL14 b-die at the minimum.  B-die is really good quality ram and the most proven, crucial/micron e-die is also pretty good. This is pretty much the end of the window to buy high end memory at a good price, it's going to get more expensive after being cheap the last 6 months.  The high end kits go in and out of stock at newegg, so check the history at pcpartpicker and check newegg at PST business hours several times daily for things to come in stock. 
 
It seems like 3200CL14 is great for productivity apps, but the faster clock ram seems to provide an advantage for benchmarking and gaming, especially if you can get the timing down.  Almost every good score on 3D-Mark has 4000mhz memory or higher. 
 
Review G.Skill's QVL, it is less optimistic, highest they go up to is 4400CL18, while EVGA goes up to 4600CL18. 2x8gb kits.
 
Team makes some nice 4000mhz+ B-die kits that are a reasonable price, no idea on QVL.

For 2x16gb kits there are G.skill b-die 3200CL14 up to 3866CL18, keep in mind you get an advantage from the dual rank 16gb dimms.

I forgot Corsair and Patriot as good memory vendors... kevin listed the performing ic's and there is another one: Hynix with their "CJR" batch according to Buildzoid

Thanks to all. Decided to go with DDR4 3200 (14-14-14-34) from G.skill and try overclocking it to 3600Mhz with tight timings. I agree with the other post, it would be a shame to just leave the mem default and not get my money's worth outta the z390 Dark. Like buying Ferrari and only driving it for errands to Costco @ 35mph lol.

Which size ? 8 or 16 ?

Can't go wrong with 3200CL14, especially the 32gb kits, though don't be surprised if you have to throw a bunch of voltage and tuning at it to get that kind of overclock.

In a recent other thread, it was uncovered that the Z390 Dark QVL doesn't include normal 3200CL14 2x8gb, so that might be a problem if you're not into tuning memory.
