Attached a copy of my current setup, I am looking to replace the triple screens, as they are hp 23es.  Nothing wrong but nothing great at 1080p 60fps.
 
My main monitor is a beast, the Acer Predator Z35P, 3440x1440 @ 120hz,  I love it, but not looking to drop another $800 on a monitor just yet.  I am also gonna hold off on cpu update, since my pc is pure gaming, and my i7 6700K can hang with any cpu on the market, as it is for pure gaming, no editing or streaming.  So upgrading would net me at best, 10 to 15% increase for a cost of $500 or so.  Ill wait on that.
 
I am curious about HDR tech and 4k tech.  Should I pick up a 4k monitor at 60hz for visual appeal or look for a 1440p 144z?  I want something that makes visuals jaw dropping gorgeous.   The Z35P looks amazing, just not that amazing.

Not quite 48:9 aspect ratio, but there are several 32:9 options out there.

Im not that savy to give a competent answer on HDR & 4k.   I built my first PC in 1988 and IMHO I like to be a notch or two below the new new thing.  You know your stuff is not going to become obsolete and don't want to be Beta tester.  FRom wht I read 4k is a generic slang term for TV'a and HDR is a standard with many definitions on who is developing it.  They do have 4k/HDR.
 
4k is less resolution but again HDR is still in Beta mode IMHO.

Also in the article remember 8k and 16k is approaching the TV market … making non standard HDR of today a dead end … unless the HDR developers get together and compete with 8k 16k 32k etc.

Having 2x 24" 4k panels at work, and all it's pixel density glory, if I could do it again I wouldn't. 4k on a typical desk setup is just not worth it.....especially given the performance hit. Honestly my eyes can't really tell the difference between my 2k & 4k panels for gaming. now playing at a distance is a different story. If it were me, a 1440p + 144Hz panel  would be the absolute best option. Any Viewsonic, Samsung, Asus, or LG monitor in the $400 range will be a great monitor. Another major con of 4K panels is the extra cost of having a GPU which can push 4k. Best of luck!

Have you checked out what kind of performance people are getting with similar setup as yours, while running 4K @60fps?
 
1080p will allow you to go longer between system upgrades
4K (60fps+) will require you to upgrade sooner

Not found anybody with my exact build, most have either an i7 700k or the 8700k with a 1080ti, but I usually upgrade every 5 years or so

I've been pretty happy with my LG 43MU79-B.  43" IPS 4K 16:9 flat.  Going for about $500 now.

If you're looking to replace the triple screens, I'd go with the widest gaming IPS screen possible @ 1440p.  Don't think 4K exists yet and if it would, it would cost you a home mortgage and a kidney.
