I would personally take a guess and say performance of an RTX 2080 SUPER would be about 10-20 percent better in performance than a standard RTX 2080.

2944 to 3072 shaders isn't that big of an update.  The 16 Gbps DDR6 is a nice upgrade to the memory bandwidth though.  I would expect a 10% increase in total performance max though.

Check and Review the Difference in CUDA Cores as well.

If you already have a good 2080, for most people, as in, for all people other than super rich people, it's really not worth the hassle of going through selling the previous GPU for a loss to get the 2080 Super. And memory speed is increased to 15.5 GBps, not 16, which makes the bandwidth 496 GBps, not 512. I could guess a max of 3% increase in performance. As for your question on SLI with ray tracing is recommended by NVIDIA to disable SLI when working with ray tracing. I would suggest selling your 2080 for a 2080 Ti, in which you could actually benefit from, since all 3D applications can take advantage of more CUDA cores, but not all 3D applications can take advantage of SLI.

Paul's Hardware did a comparison of the 2060 vs 2060 Super and 2070 vs 2070 Super.  Looks like the big winner is the 2060 Super, thus far.  Gains in the 2070 series seemed smaller.  Keep an eye out on the 2080 Super.  Perhaps you are fine with what you have.

I don't know if an upgrade would be perceptible

Maybe wait for the next cards to come out. Not enough of an upgrade at the moment for you.
