Need a RAM and PSU recommendation for my freshly arrived X58 system

The main system is an EVGA Classified 3way SLI + Xeon X5690. According to the specs, this board supports up to 1333mhz of RAM speed but I'm still seeing people using 2000+ mhz kits, just wondering why or how.
2nd is the PSU, my goal is to reach 4.4Ghz stable for daily activities, that's all. I have a 1070ti waiting to be installed as well. 
Another thing, while strolling through OC forums people are actually recommending not to get the AIO CM Lite 240 but get tower coolers like the T400i, while that thing is $15, though Noctua seems a bit more reasonable. I just want to hear you guys thought about this.

    I myself would get the EVGA 850G or g2, 850w will let you be in the sweat spot and let you have room to grow some.
    EVGA, Seasonic are good PSUs, I have had good luck with XFXpro series 1050w but go gold or better like platinum 
    And if overclocking the x56xx and a GPU overclocked you want good power and a little more than you need, why I say 850w
    As for ram I have had very good luck with Gskill 1866 on my x58 boards, and I have run tripple and dual channel mem configurations.
    Honestly running 2x8gb 16gb total was just as good as running triple channel in app like primegrid that needs good fast ram.
    In most real life apps you will not see a difference and the price premium for a 3 piece set is not worth it.
