If I wanted a 27-32 in monitor 144hz, would 1920 x 1080p look ok?
or should I go 1440p?
the 1080p would be easier on a GPU but I want it to look nice too
This is my first "Real" gaming monitor I am shopping for all the previous have been 60hz and 23-24 in
With the prices of graphics cards being such as they are, this is a pretty big decision for me

The higher the 'PPI' (Pixels Per Inch) the better the detail so with that said, if you're looking for 27", I'd go with at least 1440p 120/144Hz screen but than you'll need a beefy GPU to drive the game settings to max, dependent on the game if that's what you're aiming for. 
 
I should note I also came from a 24" 1080p 60hz to a 27" 1440p 144hz.  Did I notice a massive difference, probably not since I could remember but do like that I have more view.  Maybe jumping to 4K 144Hz would have been more suitable but not for my wallet. 
 
I have the 1440p 144hz running on a RTX 2080 Ti Black and my only demanding title I currently use is BFV which it averages around 100 FPS which is good enough for me.

1440p....definitely.  Colors are vibrant and awesome.  Go big too....nothing below 27 in my opinion. 
 
Yes, you will need some horsepower for a GPU....what are you currently running with?
 
With a monitor, I would future proof your rig.  You will most likely upgrade your GPU 3-5 times without ever replacing the monitor.  So even if you have to settle for a few lower spec's now on graphics options, it will be worth the wait once you can upgrade your GPU.

I was thinking about watching a video about monitor sizes and refresh rates. While I feel the video was kind of dumb to say 4K is dumb the point was that 1440p with a high refresh is a better use for money right now then a 60hz 4K monitor and in the testing everyone was able to notice the difference between 1080p and 1440P.
