Need help Starting a new build

I have the following arriving to today:
i5 8400
Asus TUF Z370-PLUS GAMING
Corsair Vengeance LPX 16GB(2x8GB)
 
I plan to initially use my 840 evo, I am considering a new SSD, but not sure if the extra money spent will be noticeable just gaming. I compared these to mine and am uncertain, SSD tech is new to me.
 
The other thing I'm confused on is the CPu I hae coming along with alot of the others I looked at only support up to 16 PCI lanes, but motherboards allow more more than that to be used. Is there something the motherboards do to circumvent a cpu only supporting 16 PCI lanes?
My CPU supports up to 1x16, 2x8, 1x8 + 2x4. Does this mean if I use one of the other PCI slots for say SSD and sound card MY GPU is going to get limited to x8?
 
This has me confused, I don't understand why the majority of the CPU's only support 16 lanes when motherboards allow alot more than that to be in use. I've googled to see what I'm not understanding, but have had no luck.
 
This is my first build since the old AGP days, my current PC was a gift when my Dad built a new Rig.

    To get more than 16 you have to go to a high cost motherboard and Intel CPU (if not going with amd).  From my understanding if you have a low end GPU (less than$400 and or more than 2 of those GPUs) you system will not benefit from more than 8 lanes.   There are CPUs with 6 to 12 cores that have many more PCIe Lanes and require more expensive MOBs

    Work is split between the Z370 Chipset & the CPU
     
    Some Mfg use PLX chips, to expand PCIe options - however they pose their own risks & limits

    torch327 download the PDF manual for that motherboard and start reading up on how they handle PCIe lane allocation and slot usage.
    As Cool GTX said a lot of the extra stuff will be offloaded to the PCH.
    Drawback of this is that everything connected to the PCH has to use the same x4 DMI lanes to communicate with the CPU and memory. This is why the 28 lane and 44 lane Intel CPU's are used - direct communication to the CPU without the DMI bottleneck

    I'm limited to the pci lanes of the CPU. Oh well I just wont add anything. X16 and x8x4x4 no matter what cpu I have according to the manual. Lesson learned. I should have bought the $60 B board I was looking at. Oh well.

     from your Post looks like 2x8 is an option
     
    What is your build ? 
    What do you want to do - install ?
     
    Check MB manual - for any other Item that may become disconnected .... use this M.2 & then PCIe #? becomes unusable -- type stuff
