With stock paste, the 6820 does run hot when overclocking, so I would just keep it stock.  Since the heatsink is shared and gaming stresses the CPU and GPU. the heat does get out of hand.  I would reserve CPU overclocking for CPU only tasks, such as rendering. If you want a custom profile with some overclocking when gaming, focus on overclocking only the GPU, you wil get the most out of the GPU, since there is not that much performance gain when overclocking the CPU for gaming.

I have mine set to 37 multiplier on all cores, voltage on overide at 1.060V. Runs high 60s/low 70s *C even when GPU is pegged. Mine is the 980M version, though, so the 1070/1080 version might be different.

Yes, normal.  The stock settings for the 6820 is 2,7GHz base clock with turbo clock to 3,6GHz for one core, 3,4GHz for two cores and 3,2GHz for all four cores.
For overclocking the GPU, the mileage varies to each unit, but you can start with +120 for the core and +400 for the memory.  Then try +150 core, +500 memory.

The 980m is capped at +135 at the core. Usually it's pretty stable, but certain games like DQ11 will crash if you run it overclocked too high. I've also seen the power limit in Afterburner, which makes me think the stock voltage is too low and I haven't found a way to increase it.

It is possible to update the vbios on the 980M with nvflash, but I would recommend a lot of research before hand since it is possible to brick it.  The Pascal cards are write protected so nvflash doesn't work anymore, only a hardware programmer.

Nope.

It is extremely unlikely that you will find a compatible updated gpu BIOS. Even if you do find a compatible BIOS update, the likelihood that it is a necessary update which will offer any benefit, is very slim.

I run 3.4 on all cores with a -80mv offset and a custom fan curve preferring higher RPM maxing out fan speed at 75c for both CPU and GPU and the same as 'Normal' preset clocks on the GPU. I hit 80c max under full load, though i have re-pasted my system with Thermal Grizzly Kryonaut and replaced the pads with Fujipoly Extreme thermal pads.
