whats the performance like when you set the game settings to high then put dxr on low? Is there any change in performance?

I am not really surprised that 1440p is all it can do with RT on. It still looks pretty good and the DLSS and RT features make the cards worth buying. You might be able to get a good price on a 1080ti to make it worth considering but really I think RT will start to become the future of gaming and I would rather have it as an option then not.

I'd love to try this on my rig - my PC isn't eligible for windows patch 1809 yet though

you can always force the update but Microsoft is likely holding you back due to a known issue with hardware or driver you are using.

I would like a side-by-side comparison of the best 60 FPS raytracing-enabled you can achieve (yes, essentially the video you provided) versus the best 60 FPS 4K image quality/scaling you can achieve without raytracing enabled.  I watched the video, but I honestly didn't see any astonishing effects.  So, without astonishing effects, is the overall image experience actually worse with raytracing enabled due to the compromises in scaling which needed to be made?  It would be interesting to see.

It's easy to find maxed-out raytracing versus same settings without raytracing side-by-side comparisons, but what about maxed-out raytracing versus maxed-out non-raytracing side-by-side comparisons?  Traditional lighting tricks and reflective tricks already exist which I guess makes the raytracing examples I have seen not stand out very much from what I have already seen.

hardware unboxed did a video of this and the default reflections in BFV are actually pretty good.

Any easy way of doing this, apart from refreshing 'scan for updates' and checking Update-assistant daily? Guess I'll just have to be patient a couple more weeks.

Just go to the microsoft update part of their website, I think it's here... I forgot. anyway's it's somewhere. At the top it will say something about "version XXXXX available now" and you can force it from that.
