Dual Monitor Configuration - General Question

I've never done dual monitors before and I'm up but want to know...... Dual NVIDIA GeForce GTX 550 Ti's, or really any video cards I would think.... should you have both HDMI monitors connected to a single video card or one monitor to each video card?  I'm currently and it's the only way I've tried... one monitor connected to each video card.  Thanks much!
