I'm up in the air on which platform I want to go with. I mostly game so the upcoming 8 core 9900k will do just fine, especially with the high all core clocks.
But I find the X299 platform with a 7900x tempting for the high core count and the X299 Dark is a badass board. I also strongly believe in building a stronger rig to begin with and have it last a long time. That's why I went nuts with the i7 970 and X58 Classified way back when they released. It's kept up with everything just fine after dropping a GTX 1080 in it.
 
Does anyone know what kind of all core clocks are achievable with the 7900x. If I could hit around 4.5ghz on all cores under water, I'd be happy with that setup. If not, 4.7ghz on 8 cores with the 9900k without even overclocking is super tempting.
 
Cost isn't that much of an issue when comparing these platforms. I'm aware a Z370 setup is cheaper but I'm not factoring that in much.

It all depends on weather or not you delid it and the lottery - unless you buy your CPU from Silicon Lottery and get your target speed

I like MB with  4 channel DDR4 RAM
 
You could drop a Xeon CPU into that X58 to increase core count while you wait for some actual reviews
 
Only issue I've had with X58 is when trying to run SLI with a 1080 or 1080TI --> shows its age --> SLI EVGA 980 SC no problem

I have Both but you really need to layout all the processes that you want to do with your Computer.
I am Pushing 4400MHz AVX2(1) AVX3(2) on my Core i9-7900X using LM only on the IHS and Pushing 67C Max 70C
On my Delidded Core i7-8700K @ 4800MHz AVX(1) using LM on CPU Die and the IHS and Pushing 58C Max 69C
Both are Pushing PrimeGrid between 90%-100% CPU Usage so the CPU is getting a Good Workout.
 
For starts the X299 Max PCIe Lanes are 44 and the Max on the Z370 is only 16 PCIe Lanes. Mostly based on the CPU that you can use.
Also of the 16 PCIe Lanes your M.2 Device uses them as well so you have to really look at want Hardware you are also going to Install on the Motherboard.
This Includes CPU Model, Memory Size Per Stick for Total Memory, Number of Graphics Cards, Number of M2 Devices and SATA and now even U.2 Devices if you go that route. They all use and or share PCIe Lanes. Whether from the CPU PCH or an add on Chips like the PLX.
Also as with a Motherboard with a PLX Chip your Motherboards needs more Power.

You could drop a Xeon CPU into that X58 to increase core count while you wait for some actual reviews

I am already on a 6 core 970 at 4.2ghz. To my knowledge there are no higher core count chips for X58. As for the RAM, that brings up another question. I would require specific quad channel memory with X299 and a Skylake-X chip, correct? Dual channel would probably work but I would sacrifice performance.

I have no plans of going SLI since Nvidia themselves are ditching it. I'm on a 1080 Hybrid right now and I'm pretty happy, I may pickup a RTX 11/2080 depending on price but as of right now I will stay with the 1080.
 
I do plan on using a Samsung NVMe SSD, three SATA SSDs and a SATA HDD, so PCI lanes will come into effect. I think this alone makes me want to go towards X299.

You'll definitely need a quad channel kit for x299.

Hope your close to  Micro Center or like road trips, cause those prices are in store only - I've tried before (its a 200 mile round trip for me)

I would look more at the EK Phoenix 360 over the EK Phoenix 240
Only $20 more but you do need to room to install it in the Case.
Myself I went with the below;

Found the 280 kit (https://www.ekwb.com/shop/ek-kit-p280) but as bcavnaugh said the bigger ones would be better - go with whatever the biggest radiator will fit in your case. Even if it is just the 280

I am in the US and just ordered a Lian Li PC 011 Dynamic. I am currently using the EK Phoenix kit for my CPU. It will have to do until I have the time to build a custom loop

I currently have the block as well. Just uses different mounting hardware for lga 2066. I'm hoping that 280mm rad is up to the task.

I appreciate the offer but I'll probably go the Silicon Lottery route. I like the binning process as well. I'd normally get to know the chip and its limits myself but I have an infant and tinkering time is hard to come by now.

I should be good. That's the whole reason I bought a new case. The VRM heatsink on these x299 boards are huge and won't fit behind my radiator in my current case (Anidees AI Crystal)

I am currently using the entire kit. Radiator model and CPU block. I will just require different mounting hardware to accommodate lga 2066. I'm just curious if that 280mm radiator has enough cooling capacity for these beastly Skylake chips when over clocked. I already know the hardware will fit in my case and on the board+chip.
