They are creating the games, so they should know how to optimize their own creations.

How is everyone doing a few weeks post-release?
 
I never noticed a problem in Valhalla and I started playing on Day 1.
 
Here is a bench I just ran.
 
My 3080 is completely stock. My CPU is a 5.2 all-core OC.

So I decided to get it today.    The benchmarks with max settings/1440p were getting me around 60fps on my Rig.   I disabled AA, DoF and Motion blur and got the Benchmark to 72fps.
 
Gameplay in the wilderness is averaging 72 to 80.   Drops to about 68fps in the larger cities.
 
It's quite acceptable in my opinion. Not great, but acceptable.   Steve was right though about the memory leak thing, game starts off around 4 gig in memory and then after an hour it's approaching 7 gig
