8700k 2080Ti SLI vs 5960 2080Ti SLI vs no SLI

Hey everyone!
 
So two days ago, I picked up an 8700k and the ASUS ROG Strix Z390E mainboard. (I know, I know, but I've always run ASUS boards).  Anyhow, you can see my current rig in my sig.  I'm deciding on whether or not to keep the 2nd 2080Ti and going to do some testing with one and two cards in the 8700k system as well as the 5960x.  Honestly, I'm seeing no benefit to running this second card right now, even at 7680x1440p.  I have no idea whether or not the SLI running at 8x8 vs 16x16 will even be an issue. 
 
If I do indeed decide to sell the second 2080Ti, the 8700k will be perfect even with only 16 PCIE lanes from the chip.
 
Suggestions?  Thoughts?
 
Also, planning on Delidding the 8700k when my tools get here.
 
Edit:  This is for gaming only.  I used to love to bench, but just don't have the time any more.

    Update:
     
    Currently testing 1 x 2080Ti on the 8700k (@4.8) vs my 5960x (@4.5).  I am seeing a general 25-45% increase in frames across a number of games.  Quite interesting!  
     
    Going to throw the 2nd card in next week and do more game testing.

    I really want SLI to work but last time I used it I had to consistently disable the second card because a game I was playing did not support it.
