Just wanted to get some idea if my ideas around running 2 1080 FTW Ti's is silly. Seems there isn't support for those kind of things anymore and I wonder if I should just use 1 and OC the heck out of it and try and gain more performance. Any thoughts?
Thoughts on what? Nobody has any idea of what you have now, and what you plan to do. Those are all still in your head... try as I might... I cannot read minds.

You make a great point haha. It's more am I aimless in my assertion that having 2 1080 Ti's is going to have any effect on performance? I was not up to date on the support being cut off. Just wanted to know if I should just take the second one out and proceed with one? Will I see any noticeable improvement from having 2 cards in?
That depends entirely upon what you play. There's a very large catalog of games that do quite well with SLI. Most DX12 titles do not. Any game that uses GPU PhysX will see a decent bump because one GPU can do PhysX while the other renders so PhysX effect don't kill the FPS. Batman titles and Borderlands titles see good gains. Lastly can your system even run SLI? My system is ideal for it.
