Hey, I got a quick question for all of you LC Vets.. With the specs listed for this pump, would it be safe to run it off of a PSU?

No, not really. It's a 24V pump, PSUs are 12V. If you have a special 24V PSU, then yes, but otherwise I'd say go with MCP 355s.
