Can someone tell me where can I buy Fujipoly thermal pads of 2 mm thickness for my 1080 or any other 2mm HIGH quality thermal pad?

Performance PCS is the place to go. They are in and out of stock but you can grab them with some patience.
 
Note that if you're permanently out of luck with the 2 mm ones, you can get 1 mm thickness, and use two layers of it. Works the same.

Correct me if I'm wrong but wouldn't  2 pads of 1 mm thickness affect the heat transfer that if I use a single 2 mm pad?

That's a back up option. Since the 2 mm ones are in stock, grab the thickness you need.
