Hi,
 
my PSU only provides 1x 6 pin and 1x 6+2 pin to supply the graphics card. So, when installing the 1070 yesterday, I plugged in the 6+2 pin in the right power slot on the 1070 and used the supplied adaptor to connect the 6 pin to the left 8 pin port on the 1070. Is that the way to go?
 
I'm using the Inter-Tech Coba Nitrox 600W PSU. Performance chart is attached.

The PSU you have only has 1 6 pin and 1 6+2 pin cable, but the card you have requires 2 6+2 pin cables.  It would not be wise to adapt too many cables to support this graphics card.  I would recommend replacing the PSU to one that has the correct power connections.
