I considering do step up to 1080 GAMING ACX 3.0 now or wait couple month ? but is worth it coming from 1070 ftw?

Probably not as they have the same Base clock & similar Boost clock.  OC is never guaranteed.

I really want to do this now that I know the ACX will be OK in my unusual case but that just means I'll be able to justify going from 1920x1200 to 2560x1440 and this few hundred dollar upgrade will turn into $1200.

Not sure its worth the extra 300 bucks, the 1070 should handle 1440 fairly well. Keep in mind that the step up will likely take a few months. EVGA have been putting all their 1080 chips into premium cards. They might not have the ACX version for awhile. You could always get into the que and decide later.

Just like coming from a 980 Ti (which I have researched extensively) which has very, very close performance to a 1070 (stock to stock, and OC to OC), there is about a 15 to 30% difference depending on clocks and games tested.
 
Is that 15 to 30% worth it? That's a question that only you can answer.

I think the price difference is actually worth it this generation for the 1070 to 1080. The ratio of cost to performance seems more balanced over the previous premium priced gtx 980 to 970.

Cool GTX, nobody pays any attention to the memory bandwidth nor the texture fill rate. You and I both know the 1070 will tank first before the 1080. Sorry, I don't mean to come off so sharply, but it blows my mind away that everybody focuses on the speed portion of the video card but pay no attention to anything else.
