(Have 2x 680 4GB Classy with the coveted 680 Hydro Copper blocks at the moment, so should be a decent jump!)

Better be, I waited years for this

I haven't purchased one in the past, but aren't they typically around $150 more at release?  So, $749?

Don't get why people buy the hydrocopper. Buy an ek block and the ref based pcb and you got the same card for less and better 2nd hand sale  or for when your loop is down as you still have the stock cooler for whatever reasons. Your paying the cost of the regular plus the block and some for a hydrocopper. Evga needs to throw in an air cooler to the hydrocopper bundle for it to make sense.

I know but i do like to safe time and reduce risk this time, when i had to replace ek block on my gtx 480 due some kind of debacle i knocked of caps ended up returning it to evga while paying for repairs, so i prefer to avoid this time around, it also mean i don't have to keep an extra block around in case i have to return it for warranty.

Then the hydrocopper needs to be a better card out the box. It's always been a ref pcb. I remember the 980 hydrocopper was like 50 less than my kpe? and that was 800 or 850 I forgot.. That's a joke. If you look at the hydrocoper block, its just an ek block with another plate on top. So why not give us a better pcb based card with higher clocks with the water block.

I would't mind a hydro be nice to know if its gonna be avaible on launch day or if it comes bit later if so how much later ?
How much later did the 980 hydro came anyway after 980 launch ?

I recall it was closer to 60 days than it was 30 days.  I've done this a couple of times now, you're better off waiting and just being patient.  The only time it killed me was when the 680HC first came out.  The first run (I had 1) was killer, the clock speeds were faster than classified and maybe even better than the kingpin version, which came much later.  Sadly, they never had a second run of that card.  It later became the GTX HC2, a shell of itself.  In any event, I'd say take the patient path.

Shipping from USA to Europe? Higher VAT? I feel your pain though
