Anyone have advice on how to mount these? Everyone using thermal tape? I suspect there will be unevenness with the different chips. Any TIM in a addition tape? Also I notice the underside of the chipset block is not exposed copper. I'm wondering if I should use a non conductive TIM like ceramic or something.

You can always lap the chipset block if you want.  Since that South bridge block gives off like, 10W or something, its not the focus of thermal worries... your vreg is.  Try out different combo's and see what works best for you.

That looks absolutely amazing man!  I've been wanting to do something like this.  I think all straight down pipe just looks fantastic!

My X58 board died, and they didn't have anymore (duh, its been 5 years).  Lifetime warranty on the board got me the latest & greatest.  This is why I will be EVGA boards for life.  my old serial number was like 000010.  heh.

Should I?  Do you think the guys that makes them will hook me up?! 
literally... 5 years ago TODAY is when my X58 went live.  5 years to the DAY today, my X79 Dark goes LIVE.  What are the odds?!  And what are the odds of going that long without an upgrade?!  Kudos to the X58 platform.  It was (is) rock solid and ran every application I threw at it for the past half a decade.

I firmly believe it would still be fine if my ancient power supply didnt bite the dust.  It was a refurbished Antec 1KW.  Lasted for yeeeaaarrrs.  but I overclocked like crazy for a while, so I am sure it shortened the lifespan.
