Will one of the new custom overclocked 1080's be sufficient to run that?

    No.
    to get 120+ fps @1440p on decent quality settings either 1070sli or 1080sli.
    1080 Ti OCed maybe can, but i wouldn't hold my breath.

    I understand its not optimum but I don't plan on going SLI anything.  Did I waste my money on this monitor or should I look for 144hz 1080p gsync one as I can still return this one.  I still plan on getting a new 1080 card as I'm upgrading from a 660 (sigh)

    Isn't the whole point of Gsync to dynamically match the FPS of the video card to the refresh rate of the monitor?
     
    144 Hz or 40 Hz, it should look the same - buttery smooth that is.

    I don't see why it should not be enough unless you want to have >120 FPS on each and every game.
    you don't need that either as you have G-Sync, that's the whole point about having G-Sync.

    Actually it depends alot on what games you play . At the end of the day even if gtx 1080 can't hit 144fps at lets say ultra setings (again depends on your games ) you can lower some demanding settings and im pretty sure that 1080 will hit this magic number . So in my opinion keep your 1440p monitor as you can always turn down the resolution at 1080p (to be able to manage 144fps ultra settings ) and when you can go for a second 1080 or 1070sli to be able to play 1440p 144hz .

    + As guys have pointed out you have a
    G Sync monitor wich will guarantee smooth experience with lower fps

    I'm mostly a multiplayer type guy, Overwatch now and I know I won't have any problems handling that.  I'm not too much into the big solo player AAA titles like Witcher, etc but not ruling them out either.

    Gtx 1080 hits 130fps on Overwatch 1440p ultra settings so you can definitely go with a single card .

    Gsync + (any supported Nvidia card that can maintain >40FPS in games and the settings you want) = Win

    WHen you have GSYNC, 144hz is just a number, and at the end, it's pointless; you'll soon find yourself reducing the max FPS just to feel GSYNC actually work.

    It'll be fine, just don't expect amazing FPS at the highest settings.  Most benchmarks in reviews turn down a lot of settings (hairworks in Witcher 3 for example).  So never take that seriously.
