Is there a guide or better yet video of how to overclock the 1080 with the precision x oc software? I've found 1 video on yt for the 970 but it seems a bit outdated.

I don't have a link for you, but be advised that other than the basic slider adjustment, the previous generation cards had boost 2.0 and not 3.0 so the guide won't show you how to adjust the curve manually.  If you are only shooting for the basic adding of clock speed until you hit artifacts, the old method still works.

    Halloh!

I was just wondering, isn't the gtx 1080 supposed to have 10000 mhz memory clock according to nvidia, evga, and everyone else?

Why do I see 5005 mhz on precision?

    Thx!

You have to double what you see in PX because 10K is effective rate.

EDIT:  I should have clarified.  The DDR in GDDR5X stands for Double Data Rate, so you are getting data transfer twice per cycle making it effectively double what it is operating at.
