I would like to learn that..
Look into Hapkido or Aikido it looks to be that style of combat -edit- Although I must admit going up top is highly unusual. We typically went after higher value targets than the head. A man cant attack if his legs or feet are broken. If not feet or legs then soft targets ie.... elbow, wrist, throat, ears, nose, eyes. Notice the progression; work from bottom up when possible ;)

yah man...I have spent a lot of time staring at this as well. if you watch his legs, he looks like he helps it a little. Im not sure if he does that because it is staged, or whether he does it to keep from having his neck get broken. I could see someone actually getting killed if landing on the head with the neck not straight. in any case pretty cool!!
