My Evga 780Ti SC voltages never shows default 1.187v even with doing benchmarks, most i have seen is 1.162mv, any reason for this ? cheers

Because software can not properly read voltage, so it is usually wrong anyway.

I have seen plenty of screenshots of GPU-Z and they all show 1.187v, but in my GPU-Z its always just 1.162, why i was wondering is, i can only overclock core +49 on offset, and most people with my card gets like +150, so i was thinking its because of my low voltage.

It legitimately effects nothing. It is wrong either way, so it isn't something to worry about.

Ah ok, i always thought less volts would mean you cant overclock as much, and i dont even seem to have default max volts.
