I currently have the i7 6700K and the EVGA Z170 Classified K. I am looking for ram that will not have any problems working with XMP setup. My system will not be overclocked. I heard sometimes the higher the ram speed the less stable it can be. I am looking for ram that will match a Red, Black and white theme build.

Thanks

Stick with ram at 2133Mhz if you want to avoid issues. That is the fastest guaranteed by Intel to work with that processor.

Case - Phanteks Enthoo Evolv X
    Mobo - EVGA X570 FTW
    CPU - AMD Ryzen 9 5900X
    RAM - 32GB Trident Z Royal 3600MHz 14-14-14-34
GPU - EVGA RTX 3080 Ti FTW3 Ultra Gaming
    PSU - Seasonic Prime TX-1000

As said, everything over 2133 MHZ on Skylake is considered as overclocking and there is no garanty you can stabilize RAM with higher frequencies. But i think nearly every CPU should be able to run frequencies up to 3000 MHz. Gskill has some nice stick in black and white: http://gskill.com/en/product/f4-3200c15d-16gtzkw

if you have a "K" model CPU you can go higher than the 2133. However, the memory you buy with higher ratings normally require higher DIMM so a 3000 would normally require 1.35v for DIMM.  If you have a non-"K" then you could go to 2400 with the 1.20v DIMM.  Also, Intel recommend only 1.20v for the Skylake CPU Z170 systems, any other (higher)  DIMM Voltage could be necessary as Intel says it is overclocking.

    XMP is overclocking.

You can probably get away with 2666 MHZ without adjusting BCLK or vcore voltages though.

If stability is your main concern I would stay at 2133MHz.

For what it's worth I am running this GSkill set 16GB (8GBx2) with the 6700k on the Classy K
    DDR4-3200 CL 14-14-14-34 @ 1.35V
    http://www.gskill.com/en/product/f4-3200c14d-16gvk

Currently running CPU at 4200 MHz, Ram Overclocked to 3400 MHz. Have had no issues at these clock speeds, or at stock speeds. Looks good with my black and white theme. Top of DIMMs shows black with GSkill in white text.

Don't worry. Every RAM Kit has stable settings for booting. In worst case you just won't be able to run on the highest frequency.

Get the RAM and post here, we will help. mine booted stock and XMP1. It might go through a couple of weird boot cycles when enabling and disabling XMP, but it is nothing to worry about.

Have you seen this kit? It is essentially the same, except Faster (3000 MHz), Lower Latency (15-15-15-35), and it is $15 cheaper (on sale right now).

I would expect both kits to work fine though. Both are on the GSkill QVL (tested to work list) for the other EVGA Z170 boards.
