EVGA Z170 FTW Boot Issues

Ok so, my computer was running fine about a week ago. I decided I was finally going to get around to OC'ing my i5 6600K. Did my research and compared some guides. I updated my BIOS from v1.03 to v1.08. I started with a 4.2 Ghz OC @ 1.30V as it has been noted that it easily achieved on Skylake.
 
Now the issue: I can't boot directly into Windows. I would be asked to 'Insert bootable media' or something along those lines so I know it was getting through the POST fine. However, if I enter the BIOS during POST my SSD is listed as an available boot option and I can choose to over-ride the BOOT settings and I can get into Windows no problem. So I went back into the BIOS and everything is set to the correct boot order.
 
I changed NOTHING in the BIOS except for the multiplier and the voltage of the CPU along with the firmware update.
I thought, ok, maybe that was to much OC so I just reset it back to stock and same effect, can't boot directly into Windows.
I thought, ok, maybe I accidentally changed something I shouldn't have so I reset the BIOS to the default configuration and that didn't work.
 
What I have noticed is if I change the BOOT mode from Legacy to UEFI none of my drives are seen in the BIOS. 
 
TL;DR, I can force boot into Windows by over-riding through BIOS but unable to go direct to Windows.
 
Thoughts?

    The BIOS update most likely reset all of your settings. This includes everything related to your drives. I'd shotgun a guess that its related to compatibility mode.

    When I'm in Legacy Mode I'm able to see my drives and do the over-ride to boot into Windows. If I switch to UEFI Mode all of my drives disappear. 
     
    I attempted to repair the MBR but that was unsuccessful. Should I revert to V1.03 of the BIOS?

    What SATA port is your system drive plugged into? 
     
    Currently, I'm running Windows 7 x64. See the screen shots for how my boot config is setup. 
     

     
    I leave CSM Support enabled, and storage set to UEFI. 
     

     
    Between USB 3.0 and a NVME M.2 SSD, I had a hell of a time getting Windows 7 installed. There's something to be said for native hardware support.

    Reverting back to V1.03 of BIOS fixed my boot problems but I'd really like to get up-to-date and have V1.08. Is there a way to 'reinitialize' the drives once a new BIOS is loaded?

    I would suggest completely clearing CMOS with the little red button on the back after flashing 1.08. See if that makes any difference for you. I've found in my own experience that resetting BIOS defaults within the GUI sometimes is not enough to truly clear everything out.
