I want to upgrade my ram, currently I have 6gb ddr 2000 with 3 slots filled. I noticed the more popular packages of ram are ddr 1866 8gb x2. Is my the motherboard compatible with 2 sticks of 8gb?

2 sticks will work but 3 or 6 will give you way better performance. Tripple channel is best for x58. http://www.neweggbusiness.com/product/productlist.aspx?submit=ene&n=100008783%20600006081&isnodeid=1&name=24gb%20%286%20x%204gb%29

I have four x58 1366 x5660 running at 4ghz, and two dual socket E5620 and a dual x5650, all duel are at stock speed.
I have been running BIONC for a while and primegrid is memory intensive, I fine my dual channel systems with tighter timings at around the same speed do just as well as triple channel. In fact with some tests dual channel is faster.
I have tried many memory configurations and in real life computing BOINC or while playing games or folding at home,I see no difference between two or three channel memory. Not wort spending the extra money. Better off with 2x8gb than 3x4gb if you need the extra memory.

I don't care how many boards you have. I have had more than my share also. you only get 2/3 of your possible memory bandwidth with 2 sticks compared to 3 that is a fact.

I have the EVGA FTW3 socket 1366 X58 and I am running two 8gb sticks of G.Skill 1866 with no problem at all.
They don't list it as compatible because there were no 8gb sticks for desk tops back then.
I would be shocked if your board did not support it.

The main reason it's not listed as compatible is because the vast majority of cases of people using 8GB sticks in X58's result in no POST, missing memory, or reduced speed when it does POST.  While a handful of people are able to get it to work, most cannot; those that do often cannot attain rated specs.  The CPU's are simply not designed to handle 8GB sticks with any degree of reliability.

It's true that most memory doesn't make it to a compatibility list because it was released much later or the memory simply wasn't tested; this is not one of those cases.

Frankly, I'd just get a set of 3 sticks at 4GB apiece or go all 6 for 24GB.  The only reason those 8GB x 2 are popular, comparatively, is because most of the people buying those kits are using the mainstream line of Intel desktop boards (e.g. Z87, Z97, etc.), which only use dual-channel memory bandwidth and use CPU's that support 8GB or higher sticks.

Thew 2 DIMM kits will lower your memory bandwidth because you are running in dual channel mode not tri channel mode.  Getting 8gb DIMMs working is completely blind chance.  It is expressly not supported, frankly 24gb (4gbx6) can be a little hit and miss.  When these chips launched the Only desktop DDR3 memory was 2gb and below.  With current BIOS it will really depend on your silicon lottery for the IMC, Intel says 8gb DIMMs is not supported, and a majority of the time they do not work, most of the 8gb kits I have seen working were typically done by running them at low speed, and overvolting the DIMMs and the IMC.
Is it possible it will work, sure.  Is it likely, no, is it recommended by EVGA or Intel that you try, definitely not.  That being said it will NOT effect your warranty.
