Is there a way to disable the NF200 chips on the E762 board?

    No: But you're looking at a Less than 1% loss, so why would you want to. There is however PCIE disable Jumpers, If I remember correctly.

    What's the highest multi you are able to use with your 980X and E762 board?  I have a W3690 and a broken turbo on my E760, doesn't recognized anything above a 26 mutli even when set to 30
     
    EDIT: and what is the revision of the X58 chipset?  I think mine is 13 according to CPUz
