Well, under full load my computer pulls about I think it's 680 watts with two GTX 980s and an i7 4770k all folding (granted I'm using my UPS's system to measure this, and the monitors are connected as well, so subtract about 80 watts from that, or 600 watts, factor in a bit of headroom and leave the possibility of higher wattage cards in the future, and I'd say 850 should work, 1000w only if you want to leave room for very power hungry cards or a third card. SO 850w should be enough, just as long as you are willing to replace it if your power needs change down the road anyway. I'll be doing 3 way GTX 980s on a 1000w PSU and those are rated at 165w max draw power (though that's not a hard number really)
Another thing to consider is what options you have for power efficiency at that wattage point, I checked and at least EVGA doesn't offer a platinum efficiency level at below 1000w, so you might have to crunch the numbers and see how a 1000w platinum compares to an 850w gold, at the same power draw.
