I have an I7-970 overclocked to 4.0 Ghz. (No Turbo)
I have 2 GTX-970 FTW+s in SLI.
I have a spare GTX480 laying around.

Would using the GTX480 as a dedicated physics help at all?

Most likely not, especially with dual sli 970's. Although, you can test your rig the way it is, and then install the 480 and test that as PhysX with the same tests and see what you get. Let us know your results if you do. :)

Well to give you an idea, I tested with an i5 4790k, a GTX 770 gpu, and a GTX 470 for physx, ran Mafia II and Batman Arkham Origins and City, my preformance running all 3 titles dropped with Physx on high, with the GTX 470
