I've sent my evga gpu for the step up, but have now remembered that I forgot to include the DVI to VGA Adapter. I'm pretty worried now that it might get sent back to me and try this all over again. I included the cd, cords, and pretty much every paper that I got from the box(even that strip for aftermarket cooling). I even have the box in the package. However, I just wasn't thinking about that adapter. I see that those things are pretty cheap, so in a situation like this, how would this problem be handled?

The worse that would probably happen, is they would charge you for the adapter. Don't worry that your card will be sent back, because of that. Missing parts will be subject to a possible charge at Evga's discretion.
