Am I correct in assuming that if I don't want to see the lights on the 980's and EVGA Bridge I'll have to install some software to turn them off or cover them with tape?

Well, tape is better than nothing but in adequate as a final answer. Can I unplug the GPU's lights without killing the fans?

You can set the lighting via GeForce Experience. Once it is set, you can remove GFE if you want.

I can't argue with your logic, but, I'd rather not have any more software than is necessary.

You can disable the lights on the card with the LED visualizer without installing Geforce Experience, just navigate to the led visualizer folder in the Nvidia file on your c drive. set them the way you want, off here. And choose set at startup. This does not turn off the SLI bridge lights, just the leds on the card.

NvLedVisualizer.exe did not work on any of my SLI Pro Bridges at least I could not get it to work, I have 3 of them.
It works fine on the GPU LED Light.
But then on my Titan Rig the EVGA LED Controller is not working as well on my SLI Pro Bridge.
By the way the EVGA LED Controller works find on my GTX 980 HC Cards.
