I believe that the Nvidia HD Audio drivers do need to be installed in order for Windows to see any HDMI or DisplayPort ports as potential audio output devices.
If you're experiencing the same issue with two different cards, there may be a component in your computer that is causing the issue, rather than the drivers or the video card. As you say you get driver crash/resets once you have drivers installed, I would test your machine with either a different power supply or a different set of RAM, if you have spares readily available.
